Pizza: the basis of classical Gabriele Bonci, here in red version with mozzarella

Hello to all ...
as often happens to me, I'm in a race! (
This recipe red pizza that I made the recipe with Gabriele Bonci, is a guaranteed success!

1 kg flour sifter type 1 (I used flour for pizza Spadoni )

7 g dry yeast 800 g total water



15/18 gr salt 20 gr

olive oil

Mix in a bowl the flour with dry yeast, add some 600 grams of water, mix bene e poi mettere il sale, l'olio e altri 200 gr di acqua. Si deve ottenere un impasto moooolto morbido, senza paura! ;)
Lasciare riposare l'impasto per 15 minuti.
Rovesciare l'impasto dopo il riposo, su un piano di lavoro infarinato e fare le pieghe.
Fare un piccolo cerchio, portare il lembo superiore verso il basso e girarlo in piedi con la piega in mezzo e ripetere l'operazione 5/6 volte.
Terminate le pieghe riporre l'impasto in una ciotola coperta in frigo per 24 ore.
Senza lavorarla stendere la pizza con le mani su un piano infarinato e metterla in una teglia grande.

ORA ENTRA LA MIA VERSIONE:

Ingredients for the dough biscuits:

gr 250 farina 00 Molino Spadoni

gr 100 zucchero a velo

gr 200 burro freddo

2 tuorli

1 cucchiaino di cannella in polvere

1 stecca di vaniglia

Lavorare insieme e velocemente tutti gli ingredienti e riporre il panetto in frigo per almeno un'ora.

Ritagliare un disegno di una mascherina di Carnevale, vi servirà per dare la forma ai biscotti.

You know that I really like making bread at home, and especially trying new recipes (at least for me). Surely this can not be called bread of Ferrara, because only the original place and made with local ingredients that can be defined and unique.
This bread is especially good and crunchy eaten within a few hours;)

Ingredients:

500 gr wheat flour

15 gr yeast

2 tablespoons extra virgin olive

water as needed

salt

Mix the flour with the yeast dissolved in a little water, add a pinch of salt, oil and more water until you get un'impasto compact and not too hard. Work well for 5 minutes, then allow to rise covered with a damp cloth for 90 minutes.


Take the dough, knead again, staccare dei piccoli pezzi e dale loro forma dl pane ferrarese, facendo due cornetti attorcigliati  e incrociati fra di loro, e chiudere la parte centrale con un'altro pezzo di pasta.



Disporre il pane su carta da forno, e lasciare lievitare il tempo che il forno raggiunge la temperatura di 240°
Cuocere per 40 minuti, controllando spesso senza aprire il forno




Frittata con i cipollotti


4 uova


1 cipollotto (o 2 secondo le dimensioni)

sale

pepe nero

formaggio grattugiato (a piacere parmigiano o pecorino o entrambi)

olio evo.

Sbattete le 4 uova con poco sale e il formaggio grattugiato.
Tagliate finemente il cipollotto con la coda e fatelo appassire in una padella con olio evo, sale ed un pizzico di pepe nero.Quando sarà diventato tenero, versateci sopra l'uovo and stir well with a fork to distribute the onion along the surface.
